Use
In this step, you can define your own status values with their own meanings, in addition to the fixed processing statuses. Each processing status is maintained for an item, and can be set to all the values that are maintained in this transaction.

SAP provides the following processing statuses with the following meanings:
'01' : "Open"
'02': "In processing"
'03': "Checked"
'04' :"Forwarded"
'05': "Error"
'06': "Excluded"

Create new entries with descriptions in status maintenance.
Example
You want to implement a two-step check logic. Here, the user should first set the status of an item to "initial check ok". Only then do you want to move from this status to the status "checked". You therefore define a processing status "07" with the text "initial check ok". In dialog processing, you can now first set the status of an item to "initial check" ok, and afterwards, when all further checks have been carried out, set the status "checked".
